A little like a mild Brie, Bath Soft Cheese has a soft white rind and a gorgeously gooey, creamy centre, perfect for spreading on crackers (or even melting on pasta). When Dr William Oliver, a renowned English physician and philanthropist died in 1764 he bequeathed to his new biscuit recipe for Bath Olivers to his coachman. Cheese has been made at Westcombe Dairy Farm since 1890, and Tom Calver is passionate about preserving that cheesemaking tradition.
